Virgin Mojito

A fresh, five-minute virgin mojito recipe made with muddled mint, fresh lime, and cold soda water. No alcohol, no special tools, and easy to scale up for a crowd.

Ingredients

For the Virgin Mojito

  • 8 fresh mint leaves plus a small sprig for garnish
  • 1/2 lime juiced, about 1 tbsp
  • 1 tbsp simple syrup 1:1 sugar and water, cooled
  • 1/2 cup club soda or sparkling water chilled
  • 1 cup ice plus more for the glass

Instructions

Muddle the Mint and Lime

  • Place the mint leaves and juiced lime half in the bottom of a sturdy glass.
  • Muddle 8-10 times, pressing just hard enough to bruise the mint and release its oil. Stop as soon as you can smell mint clearly -- do not grind the leaves into a paste.

Build the Drink

  • Pour in the simple syrup and stir briefly to combine with the muddled mint and lime.
  • Fill the glass with ice, packing it in fairly tight.
  • Pour the chilled club soda or sparkling water slowly down the inside of the glass to preserve carbonation.
  • Stir once, gently, just enough to combine without knocking out the fizz.
  • Add a fresh mint sprig and a lime wheel on top, and serve immediately.

Notes

Use fresh mint only -- dried mint or extract changes the flavor completely. 1:1 simple syrup keeps sugar from settling at the bottom of the glass. Add soda water last and pour gently to keep the fizz. Double or triple the mint, lime, and syrup for a pitcher, but always add soda water fresh to each glass right before serving.
