Vanilla Syrup

A vanilla syrup recipe made with a real split vanilla bean steeped in hot sugar syrup, finished with a little extract off the heat. Ready in about 30 minutes and perfect for lattes and soda.

Equipment

  • 1 Small saucepan
  • 1 Fine mesh strainer
  • 1 Glass bottle or jar with lid

Ingredients

For the Syrup

  • 1 cup granulated sugar 200 g
  • 1 cup filtered water 240 ml
  • 1 whole vanilla bean split lengthwise and seeds scraped
  • 1/2 tsp pure vanilla extract added off the heat

Instructions

Make the Syrup

  • Add the sugar and water to a small saucepan and stir once.
  • Warm over medium-low heat for about 3 minutes, stirring, until the sugar dissolves and the liquid is clear.
  • Remove the pan from the heat, then add the scraped seeds and the empty pod.

Steep and Bottle

  • Cover and let the vanilla steep for 20 minutes off the heat.
  • Pour through a fine mesh strainer into a clean jar, leaving some seeds behind if you like the flecks.
  • Stir in the vanilla extract once the syrup has cooled for a few minutes.
  • Let the syrup cool fully, seal the jar, and label it with the date.
  • Refrigerate for up to 4 weeks and swirl before each use.

Notes

Use 2 beans for a stronger, dessert-style syrup. Add extract only off the heat to avoid a harsh alcohol taste. Discard if cloudy or sour-smelling. Two tablespoons flavors one 12-ounce latte.
