Equipment

  • 1 Blender
  • 1 Fine mesh strainer
  • 1 Large pitcher 2-quart or larger

Ingredients

For the Strawberry Puree

  • 1 lb fresh strawberries hulled
  • 1/2 cup granulated sugar
  • 1/4 cup water

For the Lemonade

  • 1 cup fresh lemon juice about 6-8 lemons
  • 3/4 cup granulated sugar
  • 4 cups cold water
  • 1 batch ice for serving
  • 1 few sprigs fresh mint optional garnish

Instructions

Make the Strawberry Puree

  • Add the hulled strawberries, 1/2 cup sugar, and 1/4 cup water to a blender. Blend on high until completely smooth, about 1 minute.
  • Pour the puree through a fine-mesh strainer set over a bowl, pressing with a spoon to extract all the liquid. Discard the seeds and pulp left behind.

Mix and Chill the Lemonade

  • Squeeze fresh lemons until you have 1 cup of juice, straining out any seeds.
  • Pour the strained strawberry puree, lemon juice, and remaining 3/4 cup sugar into a large pitcher.
  • Pour in 4 cups of cold water and stir until the sugar fully dissolves, about 1 minute.
  • Taste the lemonade and add a little more sugar or water depending on how sweet or strong you like it.
  • Refrigerate for at least 1 hour so the flavors settle and the lemonade gets properly cold.
  • Stir well, then pour over ice and garnish with a fresh mint sprig if using.

Notes

Use very ripe strawberries for the best color and sweetness. Frozen strawberries work if thawed and drained first. Keeps 3-4 days refrigerated -- stir before serving.
