Ingredients
For the Syrup
1cupgranulated sugar200 g; use 2 cups for rich 2:1 syrup
1cupfiltered water240 ml
Instructions
Dissolve the Sugar
Measure 1 cup of granulated sugar and 1 cup of filtered water. Weigh them if you have a scale: 200 g sugar and 240 ml water.
Pour the sugar and water into a small saucepan and stir once to wet all the sugar.
Set the pan over low to medium-low heat. Do not let the liquid reach a rolling boil.
Stir for about 3 minutes, until every grain has dissolved and the liquid looks completely clear.
Cool and Store
Take the pan off the burner and let the syrup cool for 15 minutes, uncovered.
Use a funnel to pour the cooled syrup into a clean glass bottle or jar, wiping the rim so no sugar grains cling to it.
Seal the bottle and write the date on a piece of tape.
Store in the fridge for up to 4 weeks. Shake gently before each use.
Notes
For rich 2:1 syrup, use 2 cups sugar to 1 cup water and keep it up to 6 months in the fridge. For a no-heat version, shake equal parts superfine sugar and warm water in a sealed jar for 2 minutes. Discard if cloudy or sour-smelling.
