Mocha Latte

A mocha latte recipe made with a smooth cocoa paste, 2 shots of espresso and steamed milk. Rich, chocolatey and ready in 5 minutes without any gritty lumps.

Equipment

  • 1 Mug
  • 1 Espresso machine, moka pot or AeroPress
  • 1 Small saucepan
  • 1 Whisk or milk frother

Ingredients

For the Chocolate Paste

  • 1 tbsp unsweetened cocoa powder Dutch-process is smoother
  • 1 1/2 tbsp granulated sugar
  • 2 tbsp hot water

For the Latte

  • 2 shots espresso or 1/2 cup strong coffee
  • 8 oz whole milk or oat milk

Instructions

Make the Chocolate Paste

  • Add the cocoa and sugar to a mug and stir together.
  • Pour in the hot water and whisk into a smooth, shiny paste.
  • Brew the espresso directly over the paste and stir until dissolved.

Steam the Milk

  • Heat the milk in a small saucepan over medium-low heat until steaming.
  • Stop at about 150 degrees F, before it boils.
  • Whisk vigorously or use a frother until the milk is silky and foamy.
  • Pour the milk into the mug, holding back the foam with a spoon.
  • Spoon the foam on top and dust with cocoa if you like.

Notes

Always dissolve cocoa into a paste first to avoid lumps. Use 1 tablespoon of sugar for a less sweet mocha. For an iced version, make the paste in a glass, add cold milk and ice. Do not boil the milk.
