Ingredients
For the Syrup
1cupgranulated sugar200 g
1cupwater240 ml
1cupfresh mint leavestightly packed, thick stems removed
Instructions
Make the Syrup
Combine the sugar and water in a small saucepan over low heat and stir until the sugar dissolves.
Take the pan off the burner and let it stop bubbling.
Gently press the mint leaves with the back of a spoon to release the oils.
Stir the leaves into the hot syrup, making sure they are all submerged.
Steep and Store
Cover and steep for 20 minutes.
Pour through a fine mesh strainer into a bowl, pressing lightly, and discard the leaves.
Let the syrup cool to room temperature.
Pour into a clean bottle, seal and refrigerate for up to 2 weeks.
Notes
Never boil the mint. Strain at 20 minutes so the syrup stays green and sweet. Blanch the leaves first for a brighter color. Discard if brown or off-smelling.
