Ingredients
For the Vanilla Syrup
1/2cupgranulated sugar
1/2cupwater
2tspvanilla extractor 1 vanilla bean, split and scraped
For the Drink
2tbspvanilla syrupfrom above
8ozclub soda or seltzer, cold
1cupice
Instructions
Make the Syrup
Add the sugar and water to a small saucepan over medium heat.
Stir until the sugar fully dissolves and the mixture turns clear, about 3 minutes.
Remove from heat and stir in the vanilla extract, or the split and scraped vanilla bean plus its pod.
Let the syrup cool to room temperature, then refrigerate for at least 15 minutes before using.
Build the Soda
Fill a tall glass with ice.
Pour 2 tablespoons of the cooled vanilla syrup over the ice.
Slowly pour the cold club soda or seltzer over the syrup and ice.
Stir once, gently, to combine without knocking out the fizz, and serve immediately.
Notes
Syrup keeps in the fridge for about 2 weeks in a sealed jar. -- Use a vanilla bean instead of extract for a rounder, less alcohol-forward flavor. -- Add a splash of half and half for a creamy float-style version.
