A ginger simple syrup recipe made with thinly sliced fresh ginger simmered for 20 minutes and steeped to mellow the spice. Bold, warming and ready for ginger ale, mules and tea.
4ozfresh gingerabout 113 g, scrubbed and thinly sliced
1cupgranulated sugar200 g
1cupwater240 ml
Instructions
Cook the Ginger
Scrub the ginger and slice it into thin coins, peeling only if the skin is tough.
Add the ginger, sugar and water to a small saucepan.
Heat over medium heat, stirring, until the sugar dissolves and the liquid begins to bubble.
Reduce the heat and simmer for 20 minutes, stirring occasionally.
Steep and Store
Remove the pan from the burner, cover, and let the ginger steep for 20 minutes.
Pour through a fine mesh strainer into a bowl and press lightly to release the liquid.
Let the syrup cool to room temperature.
Pour into a clean bottle, seal and refrigerate for up to 4 weeks.
Notes
Slice the ginger thinly instead of grating, which makes the syrup cloudy. Steep off the heat to mellow the spice. Use 2 ounces of ginger for a milder version. Discard if sour or fizzy.
