Ingredients

For the Gelatin Squares

  • 2 box (3 oz each) flavored gelatin, any flavor
  • 2 packet (0.25 oz each) unflavored Knox gelatin
  • 1 cup cold water
  • 3 cup boiling water

Instructions

Bloom and Dissolve

  • Sprinkle both packets of unflavored Knox gelatin over the cold water in a large bowl. Let sit 5 minutes until thickened.
  • Add the 2 boxes of flavored gelatin powder to the bloomed Knox mixture.
  • Pour the boiling water over the gelatin mixture.
  • Whisk for 2 to 3 minutes until completely dissolved, with no granules remaining.

Set and Serve

  • Pour the mixture into a shallow 9x13-inch pan.
  • Refrigerate uncovered until the surface sets, then cover and chill at least 4 hours, or until fully firm.
  • Once fully set, cut into 1-inch squares with a sharp knife.
  • Serve straight from the pan or arrange squares on a plate, chilled.

Notes

Store covered in the refrigerator up to 1 week. For a firmer, cleaner cut, add a third packet of Knox. For a sugar-free version, use sugar-free flavored gelatin and skip the extra Knox packet -- one packet sets firm enough on its own.
