Pour 1 cup of water into a small saucepan. Sprinkle in 1/2 teaspoon of agar-agar powder and whisk until no clumps remain.
Bring the mixture to a gentle boil over medium heat, then simmer for 2 full minutes, whisking often. Agar must boil to set properly.
Remove the pan from the heat. Stir in the cranberry juice, the cold water, and the lemon juice.
Pour the mixture into a shallow container and cool at room temperature for 10 minutes.
Refrigerate for about 1 hour, until the mixture is set and jiggly.
Blend and Serve
Scoop the set jelly into a blender, breaking it into rough chunks.
Blend on high for 30 to 45 seconds until the jelly turns into a thick, pourable drink. Add a splash of cold water if it is too thick.
Pour into two glasses over a few ice cubes and serve right away.
Notes
Use 1/2 teaspoon of agar for a soft, blendable gel; a full teaspoon sets too firm. This drink has no protein because agar-agar has none. It is a light, tart drink, not a weight-loss treatment. Store covered in the fridge for up to 2 days and re-blend before serving.
