Equipment

Ingredients

Lemon Base

  • 2 tbsp fresh lemon juice about 1 medium lemon, never bottled
  • 1.5 tbsp simple syrup 1:1 sugar to water, adjust to taste

To Build

  • 10 oz club soda cold, freshly opened
  • 1.5 tbsp heavy whipping cream at least 35% fat -- do not substitute coconut cream
  • ice fill glass to rim
  • lemon wheel for garnish

Optional

  • 1-2 tsp flavored syrup raspberry, strawberry, or lavender

Instructions

Build the Base

  • Fill a tall Collins glass to the rim with ice.
  • Measure 2 tablespoons fresh lemon juice directly into the glass.
  • Add 1.5 tablespoons simple syrup. Stir briefly to combine with the lemon juice.
  • Add flavored syrup now if using -- 1 to 2 teaspoons on top of the lemon-syrup layer.

Add the Fizz and Cream

  • Pour 10 oz cold club soda slowly down the inside wall of the glass to preserve carbonation.
  • Hold a spoon face-down just above the surface of the drink. Slowly pour 1.5 tablespoons of heavy cream over the back of the spoon so it floats on top.
  • Garnish with a lemon wheel. Give one gentle stir to fold the cream layer through before drinking. Serve immediately.
