For the Drink
12ozDr Pepper, chilled
2tbspcookie butter syrupTorani or Monin
2tbspheavy creamor half and half
1cupcrushed ice
1tbspcrushed cookie crumbsfor the rim and garnish, optional
Instructions
Prep the Glass
Wet the rim of a tall glass with a little cream, then dip it in crushed cookie crumbs. Skip this step if you are not using a rim.
Fill the glass about two-thirds full with crushed or pebble ice.
Build the Soda
Slowly pour chilled Dr Pepper over the ice, leaving about 1.5 inches of space at the top of the glass.
If the cookie butter syrup looks thick, set the bottle in a cup of hot water for 1 minute to loosen it.
Drizzle the cookie butter syrup over the back of a spoon so it settles just under the surface of the soda.
Add the Cream
Slowly pour the heavy cream over the back of a spoon, letting it float on top rather than stirring it in.
Wait 10 to 15 seconds without touching the glass so the layers separate visibly.
Top with extra cookie crumbs if using, and serve immediately while the ice is still crunchy.
Notes
Warm the cookie butter syrup bottle in hot water if it looks thick -- it pours and layers better warm. Use half and half instead of heavy cream for a lighter version. Best sipped within a few minutes before the layers mix together.
