1cupwater
1bagblack teaoptional
1tsphoneyoptional, to taste
Instructions
Prepare the Cloves
Lightly crush 4 whole cloves with the back of a spoon or the flat of a knife, just enough to crack the shells without pulverizing them.
Steep the Tea
Bring 1 cup of water to a boil in a small pot or kettle.
Add the crushed cloves, and the black tea bag if using, to a mug or small teapot.
Pour the boiling water over the cloves and tea bag, then let steep for 8 to 10 minutes. Longer steeping makes it more bitter, not stronger.
Strain out the cloves and tea bag using a fine mesh strainer.
Finish
Stir in honey a half teaspoon at a time, tasting as you go, until it's as sweet as you like.
Serve hot, or pour over ice for a cold version.
Notes
Use whole cloves, not ground -- ground cloves make the tea cloudy and bitter fast. 2-3 cups a day is plenty; store whole cloves in a dark, airtight container for up to a year.
