Ingredients
For the Syrup
1cuplight brown sugarpacked, 200 g
1cupwater240 ml
1/2tspvanilla extractoptional
1pinchfine saltoptional
Instructions
Cook the Syrup
Add the packed brown sugar and water to a small heavy-bottomed saucepan.
Set the pan over low heat and stir constantly to prevent scorching.
Keep stirring for about 4 minutes, until the sugar has fully dissolved and the liquid looks smooth.
Take the pan off the heat and stir in the salt and the vanilla, if using.
Cool and Store
Leave the syrup to cool for 15 minutes without a lid.
Pour into a clean glass bottle and wipe the rim to remove stray sugar.
Seal, label with the date and refrigerate for up to 4 weeks.
Notes
Use low heat and stir constantly to avoid scorched, bitter syrup. Dark brown sugar makes a stronger, molasses-heavy version. Discard if cloudy or sour-smelling.
