A blueberry simple syrup recipe made with fresh or frozen berries, sugar and lemon, simmered for 10 minutes and strained. Deep purple, fruity and ready in 15 minutes.
Add the blueberries, sugar, water and lemon juice to a stainless steel saucepan.
Heat over medium heat, stirring, until the sugar dissolves and the mixture starts to bubble.
Lower the heat and crush the berries gently with the back of a spoon.
Cook for about 10 minutes, until the berries have collapsed and the liquid is deep purple.
Strain and Store
Remove the pan from the burner and let it stand for 5 minutes.
Pour through a fine mesh strainer over a bowl and let it drip without pressing hard.
Let the syrup cool to room temperature.
Pour into a clean jar, seal and refrigerate for up to 2 weeks.
Notes
Use a stainless steel or enamel pan, not aluminum. Add lemon juice at the start to keep the color vibrant. Freeze extras in ice cube trays for up to 3 months. Discard if sour or fizzy.
