Instructions
Muddle the Base
Add the blueberries and mint leaves to the bottom of two sturdy glasses and muddle firmly 10 to 12 times, until the blueberries release their juice and the mint smells fragrant.
Pour in the fresh lime juice and simple syrup, then stir to combine with the muddled fruit.
Build and Serve
Fill each glass with ice, packing it in loosely so the drink stays cold without diluting too fast.
Top each glass with sparkling water or club soda, filling almost to the rim.
Stir once or twice with a long spoon just to combine, being careful not to knock the fizz out of the sparkling water.
Garnish with a lime wheel and a fresh mint sprig.
