A blackberry simple syrup recipe made with fresh or frozen berries, sugar and lemon, simmered for 10 minutes and strained twice. Deep purple, tart and ready in 15 minutes.
2cupsfresh or frozen blackberriesabout 10 oz, no need to thaw
1cupgranulated sugar200 g
1cupwater240 ml
1tspfresh lemon juice
Instructions
Cook the Berries
Add the blackberries, sugar, water and lemon juice to a stainless steel saucepan.
Heat over medium heat, stirring, until the sugar dissolves and the mixture starts to bubble.
Reduce the heat and mash the berries gently with the back of a spoon.
Cook for about 10 minutes, until the berries have collapsed and the liquid is deep purple.
Strain and Store
Remove the pan from the heat and let it stand for 5 minutes.
Pour through a fine mesh strainer over a bowl, pressing lightly to release the juice.
For a clear syrup, strain a second time through a paper coffee filter.
Let the syrup cool to room temperature.
Pour into a clean jar, seal and refrigerate for up to 2 weeks.
Notes
Strain twice for a seedless syrup. Wear an apron, since blackberries stain. Freeze extras in ice cube trays for up to 3 months. Discard if fermented-smelling or fizzy.
