Ingredients

For the Gelatin Cups

  • 2 tablespoon unflavored gelatin powder Knox brand or similar
  • 1 cup cold water
  • 1 cup sugar-free cranberry, lemon, or orange juice warmed, not boiled
  • 1 scoop unflavored whey isolate or collagen peptides optional, about 20g

Instructions

Bloom and Dissolve the Gelatin

  • Sprinkle gelatin powder evenly over the cold water in a mixing bowl. Let sit 5 minutes until thickened.
  • Heat the sugar-free juice in a small saucepan or microwave until warm and steaming, not boiling.
  • Pour the warm juice over the bloomed gelatin and whisk until completely dissolved, about 1 minute.
  • Once the mixture has cooled slightly, whisk in whey isolate or collagen peptides until smooth.

Portion and Set

  • Let the mixture sit at room temperature 5 minutes before pouring, to avoid a cloudy set.
  • Divide the mixture evenly among 4 small glass cups or silicone molds.
  • Refrigerate uncovered until just set, then cover and chill at least 3 hours, or until fully firm.
  • Unmold or serve directly in the cups, chilled.

Notes

Store covered in the refrigerator up to 5 days. Never boil the juice -- gelatin breaks down above a gentle simmer and won't set properly. Double the batch for a week of portioned servings.
