Ingredients

For the Mocktail

  • 4 oz apple cider pasteurized
  • 1 oz fresh lemon juice
  • 0.5 oz maple syrup
  • 3 oz ginger beer not kombucha
  • 1 tablespoon cinnamon sugar for the rim, optional
  • 1 cinnamon stick for garnish
  • 1 slice apple for garnish

Instructions

Shake the Base

  • Moisten the rim with a lemon wedge and dip into cinnamon sugar, if using.
  • Add apple cider, lemon juice, and maple syrup to a shaker with ice.
  • Shake for 10 to 15 seconds until well chilled.

Top and Serve

  • Fill the rimmed glass with fresh ice and strain the mixture in.
  • Pour ginger beer over the top and stir gently.
  • Add a cinnamon stick and apple slice.
  • Serve right away while still fizzy.

Notes

Use pasteurized apple cider if serving to kids, anyone pregnant, or anyone immunocompromised. Top with ginger beer, not kombucha -- kombucha is live-fermented and can carry residual alcohol. Scale up in a pitcher for a crowd, topping each glass with ginger beer individually.
