For the Mocktail
4ozapple ciderpasteurized
1ozfresh lemon juice
0.5ozmaple syrup
3ozginger beernot kombucha
1tablespooncinnamon sugarfor the rim, optional
1cinnamon stickfor garnish

Instructions
Shake the Base
Moisten the rim with a lemon wedge and dip into cinnamon sugar, if using.
Add apple cider, lemon juice, and maple syrup to a shaker with ice.
Shake for 10 to 15 seconds until well chilled.
Top and Serve
Fill the rimmed glass with fresh ice and strain the mixture in.
Pour ginger beer over the top and stir gently.
Add a cinnamon stick and apple slice.
Serve right away while still fizzy.
Notes
Use pasteurized apple cider if serving to kids, anyone pregnant, or anyone immunocompromised. Top with ginger beer, not kombucha -- kombucha is live-fermented and can carry residual alcohol. Scale up in a pitcher for a crowd, topping each glass with ginger beer individually.
