Almond Syrup

An almond syrup recipe made with toasted sliced almonds, sugar and a splash of almond extract. Nutty, sweet and made for iced lattes and homemade sodas.

Equipment

  • 1 Skillet
  • 1 Small saucepan
  • 1 Fine mesh strainer
  • 1 Glass bottle or jar with lid

Ingredients

For the Syrup

  • 1/2 cup sliced almonds raw or blanched, unsalted
  • 1 cup granulated sugar 200 g
  • 1 cup water 240 ml
  • 1/2 tsp almond extract added off the heat
  • 1 pinch fine salt

Instructions

Toast the Almonds

  • Warm a dry skillet over medium heat.
  • Add the sliced almonds and stir constantly for about 4 minutes, until golden and fragrant.

Make the Syrup

  • Add the sugar, water, salt and toasted almonds to a small saucepan.
  • Heat over medium-low heat, stirring until the sugar dissolves, then simmer for 10 minutes.
  • Remove from the heat, cover, and steep for 30 minutes.
  • Pour through a fine mesh strainer lined with a coffee filter or cheesecloth for a clearer syrup.
  • Stir in the almond extract.
  • Cool, pour into a clean bottle, seal and refrigerate for up to 2 weeks.

Notes

Contains tree nuts. Label clearly and keep away from anyone with a nut allergy. Use toasted almonds plus a little extract for the best flavor. Discard if sour, oily or stale.
